Ingredients

Method

  1. Start by cleaning the shrimp: remove the shells, leaving the tails on for flavor, and devein them by making a shallow cut along the back and pulling out the dark vein. Rinse the shrimp under cold water and pat them dry with a paper towel to ensure they cook evenly.
  2. Peel and finely chop 4 cloves of garlic. In a large skillet, pour 80 ml of olive oil and set the heat to medium. Once the oil is shimmering, add the garlic and sauté until it becomes fragrant and slightly golden, being careful not to let it burn as this will impart a bitter taste.
  3. Add the cleaned shrimp to the skillet in a single layer, ensuring they have enough space to cook evenly. Cook them for about 2-3 minutes on one side until they start to turn pink and opaque around the edges.
  4. Flip the shrimp over to cook the other side. Squeeze the juice of one lemon over the shrimp and sprinkle with chili to taste, adjusting the amount based on your spice preference. Continue cooking for another 2-3 minutes until the shrimp are fully opaque and have a firm texture.
  5. Remove the skillet from the heat and taste a shrimp. Add fine sea salt to taste, starting with a small pinch and adjusting as needed. Serve the shrimp immediately, ensuring they remain hot and juicy, perfect for sharing at the table.
