Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil

Method

  1. Start by cleaning the 600 g shrimp. Remove the shells and devein them by making a shallow cut along the back and pulling out the dark vein. Rinse the shrimp under cold water and pat them dry with a paper towel to ensure they cook evenly and absorb the flavors well.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet, pour 80 ml of olive oil and heat it over medium heat. Once the oil is shimmering, add the minced garlic. Stir continuously until the garlic turns a light golden brown and releases its aroma, being careful not to let it burn.
  3. Add the cleaned shrimp to the skillet in a single layer. Increase the heat to medium-high and cook the shrimp, stirring occasionally, until they turn pink and are just opaque in the center. This should take about 2 to 3 minutes; the shrimp should be firm to the touch but not rubbery.
  4. Squeeze the juice of one lemon over the shrimp, ensuring even distribution for a bright, tangy flavor. Add chili to taste, adjusting the amount based on your heat preference. Stir everything together to coat the shrimp evenly with the lemon juice and chili.
  5. Taste the shrimp and sprinkle fine sea salt to your liking. Stir again to ensure the salt is evenly distributed. Once seasoned to your preference, remove the skillet from the heat.
  6. Transfer the shrimp to a serving dish immediately, ensuring they remain juicy and flavorful. Serve as a shared dish at the table, allowing everyone to enjoy the freshly cooked Filipino Shrimp Pan.
