Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic

Method

  1. Start by ensuring the squid rings, 600 g, are thoroughly cleaned and patted dry with paper towels. This prevents excess moisture from steaming the squid instead of stir-frying it, which can make it rubbery.
  2. Peel and finely chop 4 cloves of garlic. In a large wok or deep skillet, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the garlic and stir continuously until it becomes fragrant and lightly golden, which should take about 1-2 minutes.
  3. Add the squid rings to the wok, spreading them out in a single layer to ensure even cooking. Stir-fry the squid for about 2-3 minutes, or until they turn just opaque and tender. Avoid overcooking as this will make the squid tough.
  4. Sprinkle chili to taste over the squid, adjusting the amount based on your preference for heat. Stir briefly to combine, allowing the chili to release its aroma and flavor into the dish.
  5. Squeeze the juice of one lemon over the stir-fried squid, stirring to coat the rings evenly. The acidity of the lemon will brighten the flavors and balance the heat from the chili.
  6. Taste the dish and add fine sea salt to taste, stirring well to ensure it is evenly distributed. Serve immediately while the squid is tender and the flavors are vibrant, perfect for sharing around the table.
