Ingredients

  • 800 gkielbasa
  • 2onions — grilled
  • 2 tbspmustard
  • sauerkraut — to serve
  • 1 tspcaraway seeds
  • to tastefine sea salt

Method

  1. Begin by slicing the 800 g kielbasa into 1-inch thick pieces. This size ensures even cooking and allows the flavors to penetrate the sausage. Sprinkle the pieces with fine sea salt to taste and 1 tsp caraway seeds, ensuring each piece is evenly coated to enhance the sausage's natural flavors.
  2. Peel and slice the 2 onions into thin rings. Set them aside momentarily. The onions will add sweetness and depth to the dish, balancing the savory kielbasa.
  3. Heat a large skillet over medium-high heat and add a generous amount of oil, enough to lightly coat the bottom of the pan. Once the oil is shimmering, add the kielbasa pieces in a single layer. Allow them to brown without moving for about 3-4 minutes until they develop a deep, golden crust on one side.
  4. Flip the kielbasa pieces to brown the other side, adding the sliced onions to the skillet at this point. Stir occasionally to ensure the onions cook evenly and absorb the flavors from the sausage. Cook until the onions are soft and translucent, and the kielbasa is browned on all sides.
  5. Once the kielbasa is browned, reduce the heat to medium-low. Add 2 tbsp of mustard to the skillet, stirring to coat the sausage and onions evenly. The mustard will add a tangy depth to the dish, complementing the rich flavors of the kielbasa.
  6. Cover the skillet and allow the kielbasa and onions to braise gently for about 10 minutes. The sausage should be tender, and the onions should be caramelized and soft. The dish is ready when the kielbasa is juicy and the mustard has melded into a flavorful sauce.
  7. Taste the dish and adjust the seasoning with additional fine sea salt if necessary. Serve the grilled kielbasa hot, accompanied by sauerkraut for a traditional touch. Enjoy it with rice, bread, or a fresh salad for a complete meal.
