Hambagu

Serves 4 to 6 meat

Hambagu

Hambagu is a quintessential yoshoku dish, a delightful fusion of Japanese and Western culinary traditions. Often enjoyed in home kitchens across Japan, this dish showcases the adaptability and creativity of Japanese cooks. It is a favorite at family dinners, bringing a touch of Western flair to the traditional Japanese table. In this version, we've captured the essence of home-style hambagu, crafted with the techniques and instincts of a seasoned family cook.

The taste of hambagu is a comforting harmony of savory minced meat and sweet onions, bound together with panko and egg, then elevated by a rich demiglace sauce. The texture is both tender and robust, with a satisfying bite that complements the luscious sauce. This dish invites you to experience the warmth and simplicity of Japanese home cooking, prepared with a careful hand and a generous use of flavor.

Ingredients

  • 400 gmixed minced meat
  • 1onion
  • 2 tbsppanko
  • 200 mldemiglace
  • 1egg
  • to tastefine sea salt

Method

  1. Begin by finely chopping 1 onion. In a large mixing bowl, combine 400 g mixed minced meat, the chopped onion, 2 tbsp panko, and 1 egg. Season the mixture with fine sea salt to taste, ensuring the salt is evenly distributed throughout the meat by mixing thoroughly with your hands until the mixture is cohesive and slightly sticky.
  2. Shape the meat mixture into four equal-sized patties, making sure they are about 2 cm thick. This thickness ensures even cooking and helps the patties retain moisture.
  3. Heat a large skillet over medium-high heat and add a generous amount of oil to coat the bottom. Once the oil is shimmering, carefully place the patties in the skillet. Allow them to brown without moving them for about 3-4 minutes on each side, until a deep brown crust forms. This crust is essential for flavor and texture.
  4. Once both sides are browned, reduce the heat to low. Pour 200 ml of demiglace sauce over the patties, ensuring they are well-coated. Cover the skillet with a lid and let the patties simmer gently in the sauce for about 10 minutes, turning them halfway through. This will infuse the patties with the rich flavor of the sauce and keep them moist.
  5. After simmering, check the doneness by pressing lightly on the patties; they should feel firm yet slightly springy. If you cut into one, it should be juicy and no longer pink in the center.
  6. Taste the sauce and adjust seasoning with additional fine sea salt if necessary. Serve the Hambagu hot with rice, bread, or a fresh salad, ensuring each serving is generously topped with the flavorful demiglace sauce.
