Hayashi Rice

Serves 4 to 6 meat

Hayashi Rice

Hayashi Rice embodies the yoshoku style, a culinary fusion that marries Western techniques with Japanese tastes. Originating from the late 19th century, it reflects a time when Japan embraced foreign influences with open arms. Often served as a comforting weeknight dinner, this dish finds its way to the table with a sense of ease, where the art of hand-judged seasoning and generous use of fat play a central role.

The rich, savory notes of tender beef meld seamlessly with the sweetness of onions, all enveloped in a luxurious demiglace sauce. Butter adds a silky finish, while fine sea salt heightens each element. Each mouthful is a harmonious blend of textures that coats the rice beneath, offering warmth and satisfaction with every bite.

Ingredients

  • 400 gbeef
  • 400 grice
  • 1onion
  • 200 mldemiglace
  • 1 tbspbutter
  • to tastefine sea salt

Method

  1. Begin by seasoning 400 g of beef with fine sea salt to taste. Use your hands to ensure the salt is evenly distributed over the meat. This step enhances the flavor of the beef and prepares it for browning.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of butter. Once the butter has melted and begins to foam, add the seasoned beef pieces. Allow them to brown on all sides, turning occasionally. Look for a deep, rich brown color on the surface of the meat, which indicates that the Maillard reaction has occurred, adding depth of flavor to your dish.
  3. Once the beef is browned, remove it from the skillet and set it aside. In the same skillet, add one sliced onion. Sauté the onion over medium heat until it becomes translucent and starts to caramelize, which should take on a light golden hue. This process will add sweetness and complexity to the dish.
  4. Return the browned beef to the skillet with the onions. Pour in 200 ml of demiglace sauce, stirring to combine. Lower the heat to a gentle simmer and cover the skillet. Allow the mixture to braise until the beef is tender, which should feel soft when pierced with a fork.
  5. While the beef is braising, cook 400 g of rice according to your preferred method. The rice should be fluffy and separate easily with a fork, providing a perfect base for the rich Hayashi sauce.
  6. Once the beef is tender and the sauce has thickened slightly, taste the dish and adjust the seasoning with more fine sea salt if necessary. The sauce should be rich and savory, complementing the sweetness of the onions and the depth of the beef.
  7. Serve the Hayashi Rice by spooning the beef and sauce over the cooked rice. The dish is now ready to be enjoyed, offering a comforting blend of flavors that is perfect for sharing at the table.
