Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper. Ensure each piece is evenly coated by tossing the cubes in a large bowl. This step allows the salt to penetrate the meat, enhancing its flavor from the inside out.
  2. Heat 2 tablespoons of oil in a heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides, turning occasionally, until each piece develops a deep brown crust. This caramelization is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into rounds and finely chop 1 onion. Once the beef is browned, remove it from the pot and set aside. In the same pot, add the chopped onion and carrot slices, using the remaining oil and beef drippings to sauté them.
  4. Cook the onions and carrots over medium heat until the onions become translucent and the carrots start to soften, stirring occasionally. This should take about 5-7 minutes, during which the vegetables will absorb the flavors left in the pot.
  5. Return the browned beef cubes to the pot with the vegetables. Add 500 ml of water, ensuring the beef and vegetables are just submerged. Bring the mixture to a gentle simmer, then reduce the heat to low.
  6. Cover the pot with a lid and let it braise slowly. Stir occasionally, and continue cooking until the beef becomes tender and the flavors meld together. The beef is done when it can be easily pierced with a fork and the sauce has thickened slightly.
