Ingredients

  • 800 gbeef cubes
  • 2carrots

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper to taste. Ensure each piece is evenly coated by tossing them gently in a large bowl. This step helps to enhance the flavor of the beef as it cooks.
  2. Heat 2 tablespoons of oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, making sure not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 3-4 minutes per side. This browning process adds depth to the flavor of the final dish.
  3. While the beef is browning, peel and slice 2 carrots into rounds and chop 1 onion finely. Once the beef is browned, remove it from the pot and set it aside on a plate. Add the chopped onion to the pot and sauté until it turns translucent and begins to caramelize, releasing a sweet aroma.
  4. Add the sliced carrots to the pot with the onions, stirring occasionally. Cook until the carrots start to soften slightly, which should take about 5 minutes. This step ensures the vegetables absorb the flavors left in the pot from the beef.
  5. Return the browned beef cubes to the pot, nestling them among the vegetables. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer, then reduce the heat to low, covering the pot with a lid.
  6. Allow the beef to braise for about 1.5 to 2 hours, stirring occasionally. The dish is ready when the beef is tender and easily breaks apart with a fork, and the liquid has reduced to a rich, flavorful sauce.
