Indian Chicken Roast 2

Indian Chicken Roast 2 is a comforting dish often prepared in Indian home kitchens, where the art of seasoning is guided by intuition rather than measurements. Ingredients

Method

  1. Start by patting the whole chicken dry with paper towels to remove excess moisture, which helps achieve a good sear. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring even coverage over the entire surface. Heat 2 tablespoons of oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Once the oil shimmers, carefully place the chicken in the pan, breast side down, and brown it on all sides until the skin is golden and crisp, about 5-7 minutes per side.
  2. While the chicken is browning, peel and cut the 1 kg of potatoes into large chunks. Once the chicken is browned, remove it from the pan and set it aside on a plate. Add the potato chunks to the same pan, stirring them in the rendered fat and spices left behind from the chicken. Cook the potatoes until they start to soften and develop a light golden crust, which should take about 10 minutes.
  3. Return the browned chicken to the pan, nestling it among the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, ensuring the acid balances the flavors and helps tenderize the meat. Cover the pan with a lid or foil, reduce the heat to low, and let it cook for about 30-40 minutes, or until the chicken is cooked through and the juices run clear when pierced at the thickest part.
  4. Once the chicken is cooked, remove the lid and increase the heat to medium to allow any excess liquid to reduce. Stir occasionally to prevent sticking, and continue cooking until the sauce thickens slightly and coats the chicken and potatoes. Taste the sauce and adjust the seasoning with more salt and pepper if needed.
  5. Finish the dish by garnishing with freshly chopped herbs of your choice, such as cilantro or parsley, to add a fresh, vibrant note.
