Method

  1. Start by seasoning the 8 lamb chops generously with fine sea salt and 1 tsp paprika. Ensure each chop is evenly coated by rubbing the spices into the meat with your hands. This step enhances the flavor and helps form a crust during cooking.
  2. Heat 2 tbsp of oil in a large, heavy-bottomed skillet over medium-high heat. Once the oil shimmers, carefully place the lamb chops in the pan, ensuring they are not overcrowded. Sear the chops for about 3-4 minutes on each side, until they develop a deep brown crust. This browning process locks in the juices and adds a rich flavor.
  3. After browning, reduce the heat to medium-low. If you prefer, you can transfer the chops to a grill at this stage. Continue cooking the chops, turning occasionally, until they are tender. You will know they are done when the meat feels firm to the touch and the juices run clear.
