Ingredients

  • 800 glamb cubes
  • 2onions

Method

  1. Begin by seasoning the 800 g lamb cubes with fine sea salt and black pepper to taste. Add 1 tsp of paprika, ensuring each piece is evenly coated with the spices. This step enhances the flavor of the meat and sets the foundation for the stew.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the seasoned lamb cubes in a single layer, ensuring not to overcrowd the pot. Brown the lamb on all sides until each piece develops a deep, rich color. This step locks in the juices and adds depth to the stew.
  3. Remove the browned lamb from the pot and set aside. In the same pot, add the 2 onions, finely chopped, and sauté them until they turn golden brown. This process will take on a sweet aroma and help deglaze the pot, incorporating the flavorful browned bits from the lamb.
  4. Add 2 tomatoes, chopped, to the onions and cook until they soften and the mixture becomes a cohesive, thick base. This forms the body of the stew, providing a balance of acidity and sweetness.
  5. Return the browned lamb cubes to the pot, stirring them into the onion-tomato mixture. Add enough water to just cover the lamb, then bring the mixture to a gentle simmer. Cover the pot with a lid and reduce the heat to low, allowing the stew to braise slowly.
  6. Cook the stew until the lamb is tender and easily pierced with a fork. The sauce should have thickened and clung to the meat, with a rich, aromatic fragrance filling the kitchen.
