Ingredients

Method

  1. Start by cleaning the 600 g shrimp thoroughly. Remove the shells and devein them, ensuring all impurities are washed away. Pat the shrimp dry with a paper towel to remove excess moisture, which helps them sear better later.
  2. Peel and finely chop the 4 cloves of garlic. In a large, heavy-bottomed skillet, heat 80 ml of olive oil over medium heat. Add the chopped garlic to the oil, stirring gently. Cook until the garlic turns golden and releases a fragrant aroma, which indicates the oil has absorbed the garlic's flavor.
  3. Add the prepared shrimp to the skillet in a single layer. Increase the heat slightly to medium-high to ensure a good sear. Cook the shrimp, stirring occasionally, until they turn pink and are just opaque in the center. This should take a few minutes; the shrimp will curl slightly and become firm to the touch.
  4. Squeeze the juice of one lemon over the shrimp, stirring to combine. Add chili to taste, adjusting based on your preference for heat. Sprinkle fine sea salt to taste, mixing well to ensure even seasoning.
  5. Taste a piece of shrimp to check the seasoning. Adjust with more salt or chili if needed. Serve the Indian Shrimp Pan 2 immediately, ensuring the dish is hot and flavors are vibrant.
