Ingredients

Method

  1. Begin by thoroughly cleaning the 600 g of squid rings under cold running water to remove any grit or impurities. Pat them dry with a clean kitchen towel to ensure they sear properly in the pan, which prevents them from steaming and becoming rubbery.
  2. Peel and finely chop the 4 cloves of garlic. In a large, heavy-bottomed skillet, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the garlic and sauté until it turns golden brown and releases a fragrant aroma, taking care not to let it burn.
  3. Add the squid rings to the skillet, spreading them out in a single layer. Increase the heat to high and stir-fry the squid for about 2 to 3 minutes, or until they turn opaque and firm to the touch. This quick cooking ensures the squid remains tender.
  4. Season the squid with chili to taste, adjusting the heat level to your preference. Squeeze the juice of one lemon over the squid, stirring well to combine and coat the rings evenly. The lemon juice adds brightness and balances the flavors.
  5. Taste the dish and add fine sea salt to your liking, ensuring the flavors are well-rounded. Serve the Indian Squid Stir-Fry immediately while it's hot, allowing the fresh, vibrant flavors to shine through.
