Indonesian Beef Pot 2

Indonesian Beef Pot 2 is a beloved staple at home tables across Indonesia, capturing the essence of everyday cooking. Crafted by home cooks who rely on instinct rather than precise measurements, this dish embodies the freedom and creativity of traditional family meals. With its generous use of fat and hand-judged salt, it’s a comforting presence enjoyed at any casual gathering or weeknight dinner.

The taste of this dish is rich and hearty, with succulent beef cubes melding with the sweetness of carrots and the subtle bite of onions. Black pepper adds a gentle heat, while the broth, deepened by the beef and vegetables, envelops each bite in warmth. It's a dish meant to be shared, inviting everyone to savor its homely goodness.

Ingredients

  • 800 gbeef cubes
  • 2carrots
  • 1onion
  • 2 tbspoil
  • 500 mlwater
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Ensure each piece is evenly coated to enhance the flavor during cooking.
  2. In a large heavy-bottomed pot, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, being careful not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 5-7 minutes per batch. This step is crucial for building flavor, so take your time to achieve a good sear.
  3. While the beef is browning, peel and slice 2 carrots into rounds and finely chop 1 onion. Set these aside until the beef is ready.
  4. Once all the beef is browned, remove it from the pot and set aside. In the same pot, add the chopped onion and sauté over medium heat until it becomes translucent and fragrant, about 5 minutes. This will help absorb the beef flavors left in the pot.
  5. Add the sliced carrots to the onions and continue to sauté for another 3 minutes, allowing the carrots to slightly soften and begin to caramelize, which will add sweetness to the dish.
  6. Return the browned beef cubes to the pot, along with any juices that have accumulated. Pour in 500 ml of water, ensuring the beef is just covered. Bring the mixture to a gentle simmer over medium heat.
  7. Reduce the heat to low, cover the pot, and let it braise for about 1.5 to 2 hours, or until the beef is tender and easily pierced with a fork. The liquid should have reduced slightly, creating a flavorful broth.
  8. Taste the broth and adjust the seasoning with more salt and black pepper if necessary. Serve the Indonesian Beef Pot 2 hot, accompanied by rice, bread, or a fresh salad for a complete meal.
