Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin

Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This helps remove any dust or debris. Dice 1 onion and 2 tomatoes into small, even pieces to ensure they cook evenly and blend well into the dish.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the diced onion. Stir occasionally and cook until the onion becomes translucent and soft, releasing its sweet aroma, which should take about 5 minutes.
  3. Add 1 tsp of cumin to the onions, stirring well to combine. The cumin should become fragrant, infusing the oil and onions with a warm, earthy scent. This step is crucial as it forms the aromatic base of the dish.
  4. Add the diced tomatoes to the pot, stirring them into the onion and cumin mixture. Cook until the tomatoes break down and meld into the mixture, creating a thick, rich base. This should take about 5 to 7 minutes, and the tomatoes should lose their raw edge and become soft.
  5. Stir in the rinsed lentils, ensuring they are well coated with the onion, tomato, and cumin mixture. Add enough water to cover the lentils by about 2 cm, then bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot, allowing the lentils to cook slowly until they are tender but not mushy, absorbing the flavors of the base. This should take about 25 to 30 minutes.
  6. Once the lentils are cooked to your desired texture, season the dish with fine sea salt and black pepper to taste. Stir well and taste to ensure the flavors are balanced, adjusting the seasoning if necessary.
