Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil

Method

  1. Start by ensuring the 600 g of squid rings are thoroughly cleaned. Rinse them under cold running water to remove any impurities, then pat them dry with a clean kitchen towel. Drying the squid is crucial to prevent excess water from causing the dish to steam rather than stir-fry.
  2. Peel and finely chop 4 cloves of garlic. Heat 2 tablespoons of oil in a large wok or frying pan over medium-high heat. Once the oil is shimmering, add the garlic and stir-fry for about 30 seconds until it becomes fragrant and lightly golden, but be careful not to let it burn.
  3. Add the squid rings to the pan with the garlic. Stir-fry them continuously, ensuring they are evenly coated with the aromatic oil. Cook the squid until it turns just opaque and tender, which should take about 2 to 3 minutes. The squid should be firm to the touch but not rubbery.
  4. Add chili to taste, adjusting the amount based on your heat preference. Squeeze the juice of one lemon over the squid, stirring well to combine the flavors. The lemon juice will add a bright, tangy note that complements the squid.
  5. Taste the dish and add fine sea salt to your liking, stirring to ensure it is evenly distributed. Serve the Indonesian Squid Stir-Fry immediately while it's hot, as the texture and flavors are best enjoyed fresh.
