Indonesian Squid Stir-Fry

Indonesian Squid Stir-Fry is a dish that embodies the essence of a home-cooked meal, capturing the warmth and simplicity of Indonesian family kitchens. Here, the squid rings are cooked with the same intuitive approach passed down through generations, where salt is judged by hand and the oil flows generously. It's a staple at home tables, shared among family and friends in an informal setting.

Expect vibrant flavors where the tender squid meets the aromatic bite of garlic and the zing of chili, all brightened with a squeeze of fresh lemon juice. Each bite offers a delightful balance of heat and acidity, inviting you to savor the moment and the company around the table.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Start by ensuring the 600 g squid rings are thoroughly cleaned. Rinse them under cold water and pat them dry with a clean kitchen towel. This step is crucial to remove any excess moisture, which helps prevent the squid from becoming rubbery during cooking.
  2. Peel and finely chop 4 cloves of garlic. In a large wok or heavy-bottomed pan, heat 2 tablespoons of oil over medium heat. Once the oil is shimmering, add the garlic and sauté until it becomes fragrant and lightly golden. This step releases the garlic's aromatic oils, which form the base flavor of the dish.
  3. Add the squid rings to the pan, stirring them gently to coat with the garlic-infused oil. Increase the heat to medium-high. Cook the squid just until it turns opaque, which should take only a couple of minutes. The squid should be tender and not rubbery, indicating it's cooked through.
  4. Add chili to taste, adjusting the amount based on your spice preference. Stir well to ensure the chili is evenly distributed, adding a subtle heat that complements the squid's natural sweetness.
  5. Squeeze the juice of one lemon over the squid, stirring to combine. The acidity of the lemon juice balances the flavors and adds a refreshing brightness to the dish.
  6. Taste the dish and add fine sea salt to your liking. Stir once more to ensure the salt is evenly incorporated. Serve the squid stir-fry immediately while it's hot and fresh, perfect for sharing at the table.
