Indonesian Vegetable Bake 2

Indonesian Vegetable Bake 2 brings the essence of home cooking to the forefront, where each ingredient is celebrated for its simplicity and depth. This dish is a staple at Indonesian family meals, a comforting presence on the table that invites everyone to share in its warmth. It's a reflection of everyday life, where the hand-measured salt and liberally used olive oil come together effortlessly, just as they would in any household.

Expect a medley of tender eggplant, zucchini, and tomatoes, each roasted to coax out their natural sweetness. The herbs play a subtle yet essential role, adding a fragrant touch that balances the richness of the olive oil. This bake isn't just a meal; it's an invitation to savor the uncomplicated beauty of home-cooked Indonesian flavors.

Ingredients

  • 1eggplant
  • 2zucchini
  • 2tomatoes
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your vegetables. Slice 1 eggplant, 2 zucchini, and 2 tomatoes into even, thin rounds, about 1/4 inch thick. This ensures they cook evenly. Place the slices in a large bowl, drizzle with 80 ml of olive oil, and season with fine sea salt and black pepper to taste. Toss gently to coat each piece thoroughly with the oil and seasoning.
  2. Heat a large, heavy-bottomed skillet over medium heat. Add a bit of the remaining olive oil to the pan. Once the oil is shimmering, add finely chopped onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft. This will take on a sweet aroma, signaling that it's ready for the next step.
  3. Begin layering the vegetables in the skillet over the softened onions. Start with a layer of eggplant, followed by zucchini, and then tomatoes. Repeat the layering process until all the vegetables are used up. This layering helps the flavors meld together as they cook.
  4. Cover the skillet with a lid and reduce the heat to low. Allow the vegetables to cook gently, steaming in their own juices. Check occasionally, and when the eggplant is tender and the zucchini is soft but still holds its shape, the bake is ready. The tomatoes should have released their juices, creating a flavorful base.
  5. Remove the lid and sprinkle your choice of fresh herbs over the top. Common choices include basil, parsley, or cilantro, which add a fresh, aromatic touch. Stir gently to combine the herbs with the vegetables.
  6. Taste the dish and adjust the seasoning with more fine sea salt and black pepper if needed. The flavors should be balanced, with a hint of sweetness from the tomatoes and onions. Serve the Indonesian Vegetable Bake 2 warm, as part of a shared meal, allowing everyone to enjoy the comforting, home-cooked flavors.
