Ingredients

  • 800 gbeef cubes
  • 2carrots

  • 2 tbspoil
  • 500 mlwater

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper to taste. Make sure each piece is evenly coated, as this will enhance the flavor during cooking.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 4-5 minutes per side. This step is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots and 1 onion. Once the beef is browned, remove it from the pot and set it aside on a plate. Add the sliced onion to the pot, using the residual oil and beef drippings to sauté until the onion becomes translucent and fragrant, about 3-4 minutes.
  4. Add the sliced carrots to the pot with the onions and continue to sauté for another 2-3 minutes. This will allow the carrots to start softening and absorb some of the flavors from the pot.
  5. Return the browned beef cubes to the pot, along with any juices that have accumulated on the plate. Pour in 500 ml of water, ensuring the beef and vegetables are mostly submerged. Bring the mixture to a gentle simmer over medium heat.
  6. Reduce the heat to low, cover the pot with a lid, and allow the beef to braise. Cook until the beef is tender and easily pierced with a fork, which should take about 1.5 to 2 hours. The broth should be rich and slightly thickened, with a deep, savory aroma.
