Japanese Chicken Roast 2

Japanese Chicken Roast 2 brings the comforting essence of a Japanese home to the table, where tradition mingles with the simplicity of everyday cooking. This dish is a staple at family dinners, celebrated for its straightforward yet soulful approach. Ingredients

Method

  1. Preheat your oven to 200°C (392°F). Begin by patting the whole chicken dry with paper towels to ensure a crisp skin. Generously season the chicken with fine sea salt, black pepper, and 1 tsp of paprika, making sure to rub the spices evenly over the entire surface, including the cavity. This step ensures the flavors penetrate the meat during cooking.
  2. In a large, oven-safe skillet or roasting pan, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken in the pan, breast side down. Brown the chicken for about 5 minutes on each side, turning carefully with tongs, until the skin is golden brown and crisp. This browning step adds depth of flavor and texture.
  3. While the chicken is browning, wash and quarter the 1 kg of potatoes. Once the chicken is browned, remove it from the pan and set it aside temporarily. Add the potatoes to the pan, stirring them in the residual oil and chicken drippings. Season the potatoes with a pinch of salt and pepper.
  4. Place the browned chicken back into the pan on top of the potatoes. Squeeze the juice of the halved lemon over the chicken and potatoes, then place the lemon halves in the pan for added aroma. Transfer the pan to the preheated oven.
  5. Roast the chicken and potatoes in the oven for about 45 minutes. Check for doneness by inserting a skewer into the thickest part of the chicken thigh; the juices should run clear, and the skin should be a deep golden brown. The potatoes should be tender and slightly crisp on the edges.
  6. Once done, remove the pan from the oven. If there is excess liquid in the pan, place it over medium heat on the stovetop and allow the sauce to reduce slightly, which will concentrate the flavors. Taste the sauce and adjust the seasoning with additional salt if necessary.
  7. Finish the dish by garnishing with freshly chopped herbs of your choice, such as parsley or green onions, for a burst of freshness. Serve the chicken and potatoes directly from the pan, encouraging everyone at the table to share and enjoy this comforting Japanese-style roast.
