Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This helps remove any dust or debris and ensures a clean flavor. Set the lentils aside to drain while you prepare the other ingredients.
  2. Peel and finely chop 1 onion. Dice 2 tomatoes into small pieces. Having these ingredients ready will make the cooking process smoother and ensure even cooking.
  3. In a medium-sized pot, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook the onion slowly, stirring occasionally, until it becomes soft and translucent, releasing a sweet aroma. This should take about 5 to 7 minutes, but focus on the texture and aroma rather than time.
  4. Add 1 tsp of cumin to the softened onions, stirring well to coat the onions with the spice. This step releases the cumin's fragrance and infuses the oil with its earthy flavor, which will permeate the entire dish.
  5. Add the diced tomatoes to the pot, stirring to combine with the onions and cumin. Cook until the tomatoes break down and form a thick, chunky sauce. This should take a few minutes, and you'll know it's ready when the tomatoes have lost their raw appearance and melded with the onions.
  6. Stir in the rinsed lentils, ensuring they are well coated with the tomato-onion mixture. Add enough water to cover the lentils by about 1 inch. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let the lentils cook until they are tender but not mushy. Taste a few lentils; they should be soft but hold their shape.
  7. Once the lentils are cooked to the desired texture, season the dish with fine sea salt and black pepper to taste. Stir well and taste again, adjusting the seasoning as needed. The flavors should be balanced, with the cumin and sweetness from the onions complementing the earthy lentils.
