Japanese Lentil Bowl

Serves 4 to 6 Entree vegetarian

Japanese Lentil Bowl

Japanese Lentil Bowl is a comforting staple found in many Japanese homes, crafted with a simplicity that speaks to its everyday appeal. This dish is not tied to any specific occasion, making it a versatile choice throughout the week. It's a reflection of the way Japanese family cooks approach their meals—intuitively seasoned and generously portioned for sharing around the table.

The earthy notes of brown lentils mingle with the sweet sharpness of onion and the tang of tomatoes, all lifted by the warmth of cumin. The result is a dish that is hearty yet light, embodying a balance of flavors that are both familiar and satisfying. Enjoy it as is, letting the ingredients shine in their simplicity.

Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures a clean taste. Dice 1 onion and chop 2 tomatoes into small pieces, keeping them separate for now.
  2. In a medium-sized pot, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Stir occasionally, cooking until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 5 to 7 minutes.
  3. Add 1 tsp of cumin to the softened onions, stirring continuously for about 1 minute. This toasts the spice, enhancing its flavor and infusing it into the oil. Immediately add the chopped tomatoes, stirring to combine with the onions and cumin.
  4. Cook the tomato mixture until the tomatoes break down and meld with the onions, forming a thick, aromatic base. This should take about 5 minutes, and you'll notice the mixture turning a rich, deep color.
  5. Add the rinsed lentils to the pot, stirring to coat them in the tomato-onion mixture. Pour in enough water to cover the lentils by about 2 cm. Increase the heat to bring the mixture to a gentle simmer.
  6. Once simmering, reduce the heat to low and cover the pot. Let the lentils cook slowly, stirring occasionally, until they are tender and have absorbed most of the liquid. This will take about 25 to 30 minutes, and the lentils should be soft but not mushy, with a creamy texture.
  7. Taste the lentils and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed. Serve the Japanese Lentil Bowl warm, inviting everyone to share and enjoy the comforting flavors.
