Katsu Curry

Katsu Curry

Katsu Curry traces its roots to the comforting embrace of Japanese curry shops, where the dish is a beloved staple. It’s a marriage of crispy tonkatsu and rich, aromatic curry sauce—a fusion that took hold in Japan in the early 20th century. While traditionally enjoyed in bustling eateries, this home version brings the experience to your kitchen, capturing the essence of a family meal shared around the table.

Expect a delightful contrast: the crunch of golden-brown tonkatsu against the smooth, savory curry sauce. The dish harmonizes tender bites of potato and carrot with fragrant rice, each element seasoned with a deft hand. It's a shared experience, a culinary invitation to savor and appreciate each flavorful layer.

Ingredients

  • 2tonkatsu
  • 400 grice
  • 300 mlJapanese curry sauce
  • 1potato
  • 1carrot
  • to tastefine sea salt

Method

  1. Start by preparing the vegetables. Peel 1 potato and 1 carrot, then cut them into bite-sized pieces. This ensures they cook evenly and absorb the curry sauce well. Set them aside for later use.
  2. Season the 2 tonkatsu lightly with fine sea salt. This step enhances the natural flavor of the meat and helps to tenderize it. Allow the salt to penetrate the meat while you prepare the other ingredients.
  3. In a large frying pan, heat a generous amount of oil over medium-high heat. Once the oil shimmers, add the tonkatsu. Brown each piece deeply on both sides, about 3-4 minutes per side, until they are golden brown and crispy. This step locks in the juices and creates a flavorful crust.
  4. Remove the tonkatsu from the pan and set them aside on a plate lined with paper towels to drain any excess oil. In the same pan, add the potato and carrot pieces. Sauté them over medium heat for about 5 minutes, stirring occasionally, until they start to soften and develop a slight golden color.
  5. Pour 300 ml of Japanese curry sauce into the pan with the vegetables. Stir to combine, ensuring the vegetables are well-coated in the sauce. Bring the mixture to a gentle simmer, then cover the pan and let it cook for about 15 minutes, or until the vegetables are tender and the sauce has thickened slightly.
  6. While the curry simmers, cook 400 g of rice according to the package instructions. The rice should be fluffy and tender, providing a perfect base for the curry.
  7. Once the vegetables are tender, taste the curry sauce and adjust the seasoning with fine sea salt if needed. Return the tonkatsu to the pan, placing them on top of the curry sauce to warm through for about 2 minutes.
  8. To serve, place a portion of rice on each plate, then ladle the curry and vegetables over the rice. Slice the tonkatsu into strips and arrange them on top of the curry. Enjoy your homemade Katsu Curry with family and friends.
