Ingredients

  • 800 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspsumac
  • flatbread — to serve
  • to tastefine sea salt and black pepper

Method

  1. Start by placing the 800 g lamb cubes in a large mixing bowl. Finely chop 1 onion and add it to the bowl. Sprinkle 1 tsp of sumac over the lamb and onion mixture, then season generously with fine sea salt and black pepper to taste. Drizzle 2 tbsp of olive oil over the mixture and use your hands to mix everything thoroughly, ensuring each piece of lamb is well coated with the spices and oil.
  2. Heat a large skillet or grill pan over medium-high heat. Once the pan is hot, add a little more olive oil to coat the bottom lightly. Add the lamb cubes in a single layer, making sure not to overcrowd the pan. Allow the lamb to brown on one side without moving them for about 2-3 minutes, then turn to brown the other sides. The lamb should develop a deep, rich color on the outside.
  3. Once the lamb cubes are well browned, reduce the heat to medium. If using a grill pan, you can continue cooking the skewers directly on the grill, turning occasionally. If using a skillet, cover the pan with a lid to create a braising effect, allowing the lamb to cook through. The lamb is done when it feels tender to the touch and the juices run clear when pierced with a fork.
  4. Taste a piece of the lamb for seasoning and adjust with more salt and black pepper if necessary. The flavors should be robust and well-balanced, with the sumac providing a slightly tangy note.
  5. Serve the lamb kebab skewers immediately with warm flatbread. Arrange the skewers on a platter for sharing, and enjoy them with rice or a fresh salad to complement the rich flavors of the lamb.
