Ingredients

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and freshly ground black pepper to taste. Ensure each piece is evenly coated to enhance flavor throughout the cooking process.
  2. In a large, heavy-bottomed pot, heat a generous amount of oil over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color and a crust forms, which should take about 5-7 minutes per batch. This step is crucial for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds. Once the beef is browned, remove it from the pot and set aside on a plate.
  4. In the same pot, add the sliced carrots. Stir them in the beef drippings, allowing them to soften slightly and absorb the flavors left in the pot. This should take about 3-4 minutes, or until the carrots start to release a sweet aroma.
  5. Return the browned beef cubes to the pot with the carrots. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer over medium heat.
  6. Cover the pot with a lid, reducing the heat to low. Allow the beef to braise gently for about 1.5 to 2 hours, or until the meat is tender and easily pierced with a fork. The liquid should reduce slightly, forming a flavorful broth.
