Ingredients

  • 800 gbeef cubes

Method

  1. Begin by placing the 800 g of beef cubes in a large mixing bowl. Add 1 tsp of cumin, fine sea salt, and black pepper to taste. Toss the beef thoroughly to ensure each piece is evenly coated with the spices. This step infuses the meat with flavor and prepares it for cooking.
  2. Peel and finely chop 1 onion. In a large skillet or grill pan, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the chopped onion and sauté until it becomes translucent and fragrant, which will take a few minutes.
  3. Add the seasoned beef cubes to the pan with the onions. Spread them out in a single layer to ensure even browning. Allow the beef to brown on one side without stirring, then turn each piece to brown the other sides. Look for a deep, rich color on the meat, which indicates the Maillard reaction has occurred, enhancing flavor.
  4. Once the beef is browned, you can choose to either braise or grill the skewers. For braising, add a splash of water or broth to the pan, cover, and reduce the heat to low. Let the beef simmer gently until it becomes tender, stirring occasionally. If grilling, thread the beef onto skewers and cook on a preheated grill, turning occasionally until the meat is cooked through and tender.
  5. Taste a piece of beef to check for seasoning. Adjust with more salt or pepper if needed. The beef should be tender and flavorful, with a slight char from the browning process.
