Ingredients

  • 2whole fish
  • 2 tbspolive oil
  • lemon — sliced
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by cleaning the fish thoroughly. Rinse each fish under cold running water, removing any scales by gently scraping with the back of a knife. Make sure to clean the cavity well, removing any remaining innards. Pat the fish dry with paper towels to ensure a good sear later.
  2. In a large skillet or grill pan, pour 2 tablespoons of olive oil and heat over medium-high heat. Once the oil is shimmering, add a handful of fresh herbs such as parsley or cilantro to infuse the oil. Allow the herbs to sizzle for about a minute until they release their aroma, but do not let them burn.
  3. Season the fish generously with fine sea salt and black pepper on both sides and inside the cavity. Place the fish in the hot pan, laying them down gently to avoid splattering oil. Cook the fish for about 4-5 minutes on the first side, pressing down gently to ensure even contact with the pan.
  4. Carefully flip the fish using a spatula. Continue to cook on the second side for another 4-5 minutes. The fish is done when the flesh turns opaque and flakes easily with a fork, and the skin is crisp and golden brown.
  5. Squeeze fresh lemon juice over the fish while still in the pan to enhance the flavors. Taste a small piece and adjust the seasoning with more salt if needed. Serve the fish immediately, garnished with additional fresh herbs if desired, and enjoy with family and friends.
