Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures they cook evenly. Dice 1 onion finely and chop 2 tomatoes into small cubes. Set these aside for later use.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook, stirring occasionally, until the onion becomes translucent and soft, which should take about 5-7 minutes. This slow cooking allows the onion to release its sweetness and form the base of the dish.
  3. Add the rinsed lentils to the pot, stirring them with the onions to coat them in the oil. Pour in enough water to cover the lentils by about 2 inches. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let the lentils cook until they are tender, stirring occasionally to prevent sticking.
  4. Once the lentils are tender, add the chopped tomatoes to the pot. Stir in 1 tsp of cumin, which will infuse the dish with a warm, earthy flavor. Continue to cook until the tomatoes soften and meld into the lentils, creating a cohesive mixture.
  5. Taste the lentils and season with fine sea salt and black pepper to your liking. The salt should enhance the flavors without overpowering them. Stir well to ensure the seasoning is evenly distributed.
