Ingredients

  • 600 gshrimp

Method

  1. Start by cleaning the shrimp. Rinse 600 g of shrimp under cold water and pat them dry with paper towels. This ensures that they will sear properly in the pan without steaming.
  2. In a large, heavy-bottomed skillet, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add 4 cloves of garlic, finely minced. Stir the garlic continuously for about a minute until it becomes fragrant and just begins to turn golden, releasing its aroma into the oil.
  3. Add the shrimp to the skillet in a single layer. Cook them for about 2-3 minutes on one side, then flip them over. The shrimp should turn from translucent to opaque and develop a light pink color, indicating they are cooked through.
  4. Once the shrimp are cooked, remove the skillet from the heat. Squeeze the juice of one lemon over the shrimp, ensuring even coverage. This adds a bright, tangy flavor that complements the richness of the olive oil.
  5. Season the shrimp with chili and fine sea salt to taste. Start with a small amount, taste, and adjust as needed. The chili should add a gentle heat, enhancing the dish without overpowering it.
