Ingredients

  • 600 gsquid rings

Method

  1. Begin by ensuring the 600 g of squid rings are thoroughly cleaned and patted dry with paper towels. This step is crucial to prevent excess moisture, which can cause the squid to steam rather than stir-fry, affecting both texture and flavor.
  2. In a large, heavy-bottomed skillet or wok, heat 2 tablespoons of oil over medium-high heat. This type of pan allows for even heat distribution, essential for achieving the quick, high-temperature cooking needed for stir-frying.
  3. Once the oil is hot, add 4 cloves of garlic, finely chopped, to the pan. Stir constantly for about 30 seconds until the garlic becomes fragrant and just begins to turn golden. This will infuse the oil with flavor without burning the garlic.
  4. Add the squid rings to the pan, spreading them out in a single layer to ensure even cooking. Stir-fry them for about 2 to 3 minutes, or until they just turn opaque. The squid should be tender and not rubbery, indicating they are perfectly cooked.
  5. Season the squid with chili to taste, adjusting the amount based on your preference for heat. Squeeze the juice of one lemon over the squid, stirring well to combine and brighten the flavors.
  6. Taste the stir-fry and add fine sea salt to taste, ensuring the flavors are balanced and to your liking. Serve immediately, while the dish is hot and aromatic, perfect for sharing at the table.
