The flavor of Longganisa is a delightful balance of sweet, savory, and tangy, thanks to the blend of ground pork, brown sugar, and vinegar. Ingredients

  • 700 gground pork
  • 1/4 cupbrown sugar
  • 3 tbspvinegar

Method

  1. In a large mixing bowl, combine 700 g ground pork with 1/4 cup brown sugar, 3 tbsp vinegar, 4 minced cloves of garlic, 1 tsp paprika, and fine sea salt to taste. Use your hands to mix everything thoroughly, ensuring the spices and sugar are evenly distributed throughout the meat. This step is crucial for developing the sweet and savory flavor characteristic of Longganisa.
  2. Prepare the hog casings by rinsing them under cold water to remove any excess salt. Once rinsed, soak them in warm water for about 30 minutes to make them pliable. This will make it easier to stuff the casings with the seasoned meat mixture.
  3. Using a sausage stuffer or a makeshift funnel, carefully fill the hog casings with the pork mixture, ensuring there are no air pockets. Twist the filled casing every 4 to 5 inches to form individual sausages. Be gentle to avoid tearing the casings.
  4. Heat a large skillet over medium heat and add a generous amount of oil to coat the bottom. Once the oil is shimmering, add the sausages in a single layer, being careful not to overcrowd the pan. Brown the sausages on all sides until they develop a deep, caramelized color. This step enhances the flavor and texture of the Longganisa.
  5. After browning, reduce the heat to low and add a small amount of water to the skillet, just enough to cover the bottom. Cover the pan with a lid and let the sausages braise for about 15 minutes, turning occasionally. The sausages are done when they are firm to the touch and the internal juices run clear.
  6. Remove the lid and increase the heat slightly to evaporate any remaining liquid, allowing the sausages to crisp up again. Taste a small piece to check for seasoning, adjusting with more salt if necessary. Serve the Longganisa hot with steamed rice, bread, or a fresh salad, inviting everyone to enjoy this flavorful Filipino dish together.
