Middle Eastern Beef Skewers

Middle Eastern Beef Skewers are a cherished staple at home tables across the region, where cooks rely on instinct and tradition rather than precise measurements. This dish is reminiscent of family gatherings where sharing is paramount and flavors are crafted with a knowing hand. Generous use of fat and a careful balance of salt ensure that these skewers are both succulent and satisfying.

The skewers offer a delightful interplay between tender beef, aromatic cumin, and the subtle sweetness of onion. Each bite is an experience of rich, savory depth, enhanced by a gentle char from the grill. These skewers are perfect for communal eating, inviting everyone to indulge in the fragrant, robust flavors together.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the beef cubes, ensuring they are evenly cut to about 2.5 cm pieces for uniform cooking. Place the beef cubes in a large mixing bowl. Add 1 tsp of cumin, a generous pinch of fine sea salt, and freshly ground black pepper to taste. Toss the beef cubes thoroughly to ensure each piece is well-coated with the spices.
  2. Peel and finely grate the onion directly into the bowl with the beef. The onion will add moisture and flavor to the meat. Mix the beef and onion together until the onion is evenly distributed throughout the beef cubes. Allow the mixture to marinate for at least 15 minutes to let the flavors meld.
  3. Thread the seasoned beef cubes onto skewers, leaving a small space between each piece to ensure even cooking. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  4. Heat 2 tbsp of oil in a large skillet or grill pan over medium-high heat. Once the oil is shimmering, carefully place the skewers in the pan. Brown the beef on all sides, turning occasionally, until each piece develops a deep, rich color. This should take about 2-3 minutes per side, depending on the size of the cubes.
  5. Reduce the heat to medium and continue to cook the skewers, turning occasionally, until the beef is tender. The beef should be cooked through but still juicy. Check for doneness by cutting into one of the larger pieces; the inside should be slightly pink and juicy.
  6. Once cooked, remove the skewers from the pan and let them rest for a few minutes. This allows the juices to redistribute within the meat, ensuring each bite is flavorful.
  7. Taste a piece of beef for seasoning. If needed, sprinkle a little more fine sea salt or black pepper over the skewers before serving. Serve the skewers warm, accompanied by rice, bread, or a fresh salad to complement the rich flavors of the beef.
