Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and dicing 2 tomatoes. Drain and rinse 400 g of chickpeas thoroughly. This preparation ensures that all ingredients are ready to be cooked without delay, maintaining the flow of the cooking process.
  2. In a large skillet or heavy-bottomed pot, heat 2 tbsp of oil over medium heat. Add the chopped onion and sauté gently, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma. This should take on a light golden hue, indicating the natural sugars have caramelized slightly.
  3. Add 1 tsp of cumin to the softened onions, stirring for about 30 seconds until the cumin becomes fragrant. This step blooms the spice, enhancing its flavor and integrating it with the onion base.
  4. Stir in the diced tomatoes, allowing them to cook down until they start to break apart and form a thick sauce. The tomatoes should lose their raw edge and meld into the onion mixture, creating a rich, aromatic base.
