Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil

Method

  1. Begin by preparing your ingredients: finely chop 1 onion and 2 tomatoes. Drain and rinse 400 g of chickpeas thoroughly. This ensures that any excess salt or preservatives from the can are washed away, allowing the natural flavors to shine through. Set these prepared ingredients aside, ready for cooking.
  2. In a large, deep skillet or saucepan, heat 2 tbsp of oil over medium heat. Add the chopped onion to the pan. Stir occasionally, cooking until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 5-7 minutes. This slow cooking of the onion forms the flavorful base of your curry.
  3. Once the onion is soft, add 1 tsp of cumin to the pan. Stir continuously for about 1 minute until the cumin becomes fragrant, infusing the oil and onion with its earthy aroma. This step is crucial as it blooms the spices, enhancing their flavor.
  4. Add the chopped tomatoes to the pan. Stir well to combine with the onion and cumin. Cook for about 5 minutes, until the tomatoes break down into a thick sauce, and the mixture takes on a rich, reddish hue. This indicates that the tomatoes have released their juices and melded with the spices.
  5. Introduce the drained chickpeas to the pan, stirring them into the tomato and onion mixture. Season with fine sea salt and black pepper to taste, keeping in mind that the chickpeas will absorb some of the seasoning. Cook for another 10 minutes, stirring occasionally, until the chickpeas are heated through and have absorbed the flavors of the sauce.
