Middle Eastern Lamb Stew 2

Middle Eastern Lamb Stew 2 represents the essence of home cooking across the Middle East, capturing the generosity and warmth found at family tables in the region. This dish is all about instinctive cooking—where salt is assessed by hand, and olive oil is a trusted ally in bringing out the richness of the lamb. It's a staple in households, especially when the family gathers for a comforting meal that doesn't need a special occasion.

Expect a robust and savory medley, where tender lamb cubes melt into a fragrant symphony with the sweetness of onions. The olive oil adds a lush texture, while a precise sprinkle of fine sea salt and black pepper elevates the flavors. This stew invites everyone to dive in, shared from a communal dish that speaks volumes of its home-cooked origins.

Ingredients

  • 800 glamb cubes
  • 2onions
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning 800 g of lamb cubes generously with fine sea salt and black pepper. Ensure each piece is well-coated by tossing them in a large bowl. This step is crucial for building the foundational flavor of the stew.
  2. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium-high heat. Once the oil shimmers, add the lamb cubes in a single layer, making sure not to overcrowd the pot. Brown the lamb on all sides, turning occasionally until each piece develops a deep, rich color. This browning process enhances the flavor and adds depth to the stew.
  3. While the lamb is browning, finely chop 2 onions. Once the lamb is browned, remove it from the pot and set aside. Add the chopped onions to the pot, using the residual oil and lamb drippings to sauté them. Cook the onions until they become soft and translucent, stirring occasionally to prevent burning.
  4. Return the browned lamb cubes to the pot with the onions. Pour in enough water to just cover the meat and bring the mixture to a gentle simmer. Cover the pot with a lid, reducing the heat to low, and allow the stew to braise slowly. The lamb should become tender and easy to break apart with a fork, which may take some time depending on the cut.
  5. Once the lamb is tender, taste the stew and adjust the seasoning with additional salt and black pepper if necessary. The flavors should be well-balanced, with the lamb's richness complemented by the savory onions.
  6. Serve the Middle Eastern Lamb Stew 2 hot, accompanied by rice, bread, or a fresh salad. This dish is meant for sharing, embodying the communal spirit of Middle Eastern dining.
