Middle Eastern Shrimp Pan 2

Middle Eastern Shrimp Pan 2 is a dish that resonates with the simplicity and warmth of home cooking across the region. It captures the essence of family meals, where ingredients are measured by instinct and the table is always set for sharing. This version reflects the way a Middle Eastern family cook might prepare it, focusing on generous use of fat and salt seasoned by hand.

The dish balances the sweetness of shrimp with the sharpness of garlic and the freshness of lemon juice, all rounded out by a hint of chili. Olive oil enriches each bite, creating a vibrant and satisfying experience. The flavors meld together, offering a taste that is both bold and comforting.

Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil
  • lemonjuiced
  • to tastechili
  • to tastefine sea salt

Method

  1. Rinse the 600 g shrimp under cold running water to remove any debris. Pat them dry thoroughly with paper towels to ensure they sear properly and don't steam in the pan. This step is crucial for achieving the right texture and flavor in the final dish.
  2. Peel and finely chop the 4 cloves of garlic. In a large skillet, heat 80 ml of olive oil over medium heat. Add the chopped garlic to the hot oil, stirring gently. Cook until the garlic becomes golden and fragrant, which will infuse the oil with its aroma and flavor.
  3. Add the cleaned shrimp to the skillet in a single layer. Increase the heat to medium-high to ensure a quick sear. Cook the shrimp for about 2 minutes on each side, or until they turn pink and just opaque. The shrimp should curl slightly and have a firm texture, indicating they are perfectly cooked.
  4. Squeeze the juice of one lemon over the shrimp, allowing the acidity to balance the richness of the olive oil and enhance the flavors. Add chili to taste, adjusting the amount based on your preference for heat. Stir gently to coat the shrimp evenly with the lemon juice and chili.
  5. Taste the shrimp and sprinkle with fine sea salt to your liking. Adjust the seasoning as needed, keeping in mind that the salt should enhance the natural sweetness of the shrimp without overpowering it. Serve immediately, allowing the dish to be enjoyed at its peak flavor and texture.
