Middle Eastern Squid Stir-Fry 2

Middle Eastern Squid Stir-Fry 2 brings the flavors of the sea to the home table, crafted in the manner of seasoned Middle Eastern home cooks. Generous use of oil and a keen hand for salt are telltale signs of this dish's authenticity. It's a straightforward preparation that finds its way onto weeknight tables, offering a simple yet satisfying meal designed for sharing and enjoying in good company.

The dish balances the tender chew of squid rings with the pungent aroma of garlic. A squeeze of fresh lemon elevates the flavors, while a dash of chili provides a subtle kick. This stir-fry is an exercise in harmony, where each ingredient shines without overpowering the others, creating a meal that feels as warm and inviting as the home it's served in.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by ensuring your 600 g squid rings are thoroughly cleaned. Rinse them under cold water, then pat them dry with a clean kitchen towel. This step is crucial to remove any excess moisture, which helps achieve a better sear during cooking.
  2. Peel and finely chop 4 cloves of garlic. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the garlic. Stir frequently until the garlic becomes golden and aromatic, which will infuse the oil with flavor.
  3. Add the squid rings to the skillet, ensuring they are spread out in a single layer. Increase the heat to high. Stir-fry the squid quickly, tossing them continuously. Look for the squid to turn from translucent to opaque, which should take about 2-3 minutes. This indicates they are cooked through but still tender.
  4. Once the squid is cooked, remove the skillet from the heat. Squeeze the juice of one lemon over the squid and sprinkle with chili to taste. Toss everything together to ensure the flavors are well combined.
  5. Taste the stir-fry and add fine sea salt to your preference. Serve the dish immediately while it's hot, encouraging everyone at the table to share and enjoy the fresh, vibrant flavors of this Middle Eastern home-cooked meal.
