Ingredients

Method

  1. Begin by seasoning 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Ensure each piece is well-coated to enhance the flavor throughout the cooking process.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color and a slightly crusty exterior. This step is crucial for building flavor, so take your time to achieve a good sear.
  3. Remove the browned beef cubes from the pot and set them aside. In the same pot, add one chopped onion and two sliced carrots. Sauté the vegetables over medium heat, stirring occasionally, until the onions become translucent and the carrots start to soften, releasing their sweetness into the pot.
  4. Return the browned beef cubes to the pot with the sautéed vegetables. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer over medium heat, then reduce the heat to low. Cover the pot with a lid and let it braise slowly, allowing the flavors to meld and the beef to become tender.
