Ingredients

  • 800 gbeef cubes

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Season them generously with fine sea salt and black pepper to taste, ensuring each piece is evenly coated. Add 1 tsp cumin to the bowl, and toss the beef cubes until the spices are well distributed over the meat.
  2. Peel and finely chop 1 onion. In a large skillet or frying pan, heat 2 tbsp oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it turns translucent and begins to caramelize, releasing a sweet aroma.
  3. Increase the heat to high and add the seasoned beef cubes to the pan in a single layer, ensuring they do not overcrowd. Allow the beef to brown on one side without moving it, which should take a few minutes. Turn the cubes to brown all sides, aiming for a deep, rich color that indicates the development of flavor.
  4. Once the beef cubes are browned, you can choose to either braise or grill them. For braising, reduce the heat to low, cover the pan, and let the beef cook in its juices until tender, stirring occasionally. If grilling, thread the beef cubes onto skewers and place them on a preheated grill, turning occasionally until they are cooked through and tender.
  5. Check the tenderness of the beef by piercing a cube with a fork; it should slide in easily without resistance. Taste a piece and adjust the seasoning with more salt if necessary.
