Pakistani Beef Skewers 3

Pakistani Beef Skewers 3 is a beloved dish that graces the tables of Karachi, Lahore, Peshawar, and Islamabad, especially during family meals and festive gatherings. This home-cooked version captures the essence of how Pakistani family cooks bring beef skewers to life — with a generous hand for salt and a keen eye for using just the right amount of fat.

The skewers boast tender beef cubes marinated with earthy cumin, black pepper, and fragrant onion, grilled to perfection. Each bite delivers a symphony of robust flavors, where the spices meld harmoniously with the succulent beef. It's a dish meant for sharing, evoking the warmth and hospitality found in every Pakistani home.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Season them generously with fine sea salt and freshly ground black pepper to taste. Add 1 tsp of cumin and mix thoroughly, ensuring each piece of beef is well-coated with the spices. This step allows the flavors to penetrate the meat, enhancing its taste.
  2. Peel and finely chop 1 onion. Heat 2 tbsp of oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and slightly golden, which should take about 3-4 minutes. This will add a sweet and savory base flavor to the beef.
  3. Increase the heat to high and add the seasoned beef cubes to the skillet in a single layer. Allow them to brown without moving them for about 2-3 minutes on each side, until they develop a deep, rich color. This browning process, known as the Maillard reaction, is crucial for building flavor.
  4. Once the beef cubes are browned on all sides, you have the option to either braise them or grill them. For braising, add a small amount of water to the skillet, reduce the heat to low, cover, and let simmer until the beef is tender. For grilling, thread the beef cubes onto skewers and grill them over medium heat until cooked through and tender, turning occasionally.
  5. After cooking, taste a piece of beef and adjust the seasoning with more salt if necessary. Serve the beef skewers hot, accompanied by rice, bread, or a fresh salad, allowing everyone at the table to enjoy the meal together.
