Ingredients

  • 80 mlolive oil

Method

  1. Begin by washing and drying 2 eggplants. Cut them into 1-inch cubes, ensuring uniform size for even cooking. Dice 2 tomatoes and finely chop 1 onion. Mince 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and black pepper, tossing to coat evenly. Set aside to allow the flavors to meld while you prepare the other ingredients.
  2. In a large, heavy-bottomed pot or deep skillet, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. Add the minced garlic and stir for another minute until it releases its aroma, being careful not to let it brown.
  3. Add the seasoned eggplant cubes to the pot, stirring to coat them well with the onion and garlic mixture. Cook for about 10 minutes, stirring occasionally, until the eggplants begin to soften and take on a golden hue. The eggplants should start to absorb the oil and release some of their moisture.
  4. Stir in the diced tomatoes, ensuring they are evenly distributed throughout the mixture. Cover the pot with a lid and let it simmer on low heat. Cook until the tomatoes break down and the eggplant becomes tender, stirring occasionally. The stew is ready when the eggplant is soft and has absorbed the flavors of the tomatoes and spices, creating a thick, rich consistency.
  5. Taste the stew and adjust the seasoning with additional fine sea salt and black pepper if needed. The flavors should be balanced, with the sweetness of the tomatoes complementing the savory eggplant. Serve the stew warm, ideally with fresh naan or rice, inviting everyone to share in this comforting dish.
