The recipe is a family affair, capturing the essence of everyday cooking with its simplicity and soul-warming qualities.

With a base of tender brown lentils, the dish is harmonized by the sweetness of sautéed onions and the tang of ripe tomatoes. A generous glug of oil carries the aromatic cumin throughout, while salt and black pepper are added to personal preference, creating a bowl that is robust yet familiar. Its texture is hearty, offering a satisfying depth that invites you to savor each spoonful.

Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear to remove any dust or debris. Set them aside to drain. Finely chop 1 onion and 2 tomatoes, keeping them separate. This preparation ensures even cooking and a balanced flavor profile.
  2. In a large, heavy-bottomed pot, heat 2 tbsp of oil over medium heat. Add the chopped onion and sauté gently, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. The onion should not brown, as this would alter the flavor of the dish.
  3. Stir in 1 tsp of cumin and continue to cook for another minute, allowing the spice to release its aroma and infuse the oil. This step is crucial for developing the base flavor of the dish.
  4. Add the chopped tomatoes to the pot, stirring well to combine with the onions and cumin. Cook until the tomatoes break down and form a thick, cohesive mixture, about 5-10 minutes. The mixture should have a rich, reddish-brown color and a fragrant aroma.
  5. Add the rinsed lentils to the pot, stirring to coat them in the tomato-onion mixture. Pour in enough water to cover the lentils by about an inch. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the pot.
  6. Allow the lentils to cook slowly, stirring occasionally, until they are tender and have absorbed most of the liquid, about 25-30 minutes. The lentils should be soft but still hold their shape, with a creamy texture.
  7. Season the lentils with fine sea salt and black pepper to taste, stirring well to ensure the seasoning is evenly distributed. Taste and adjust the seasoning if necessary, keeping in mind that the dish should be well-seasoned but not overly salty.
  8. Serve the Pakistani Lentil Bowl warm, ideally with naan or rice, allowing the flavors to meld together. This dish is meant to be shared, embodying the communal spirit of Pakistani home cooking.
