The peppers are filled with a fragrant rice mixture, reminiscent of the diverse culinary landscapes of Lahore and Peshawar, bringing together the nation's vibrant flavors.

The dish offers a delightful contrast of textures, with tender bell peppers enveloping a savory rice filling. The onion's sweetness melds with the olive oil's richness, enhanced by herbs and a hand-measured sprinkle of fine sea salt and black pepper. Ingredients

  • 6bell peppers
  • 200 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Start by washing 6 bell peppers thoroughly. Slice off the tops and remove the seeds and membranes inside. Set them aside on a plate. Rinse 200 g of rice under cold water until the water runs clear to remove excess starch, then drain well.
  2. Peel and finely chop 1 onion. In a large skillet or heavy-bottomed pan, heat 80 ml of olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. This slow cooking allows the onion to release its sweetness, which will enhance the flavor of the stuffing.
  3. Add the drained rice to the pan with the onions. Stir to coat the rice grains in the oil, allowing them to absorb the flavors. Season with fine sea salt and black pepper to taste, and add your choice of herbs, such as cilantro or mint, for a fresh aroma. Cook for another 2 to 3 minutes, stirring continuously, until the rice starts to look slightly translucent.
  4. Pour in enough water to cover the rice by about 1 cm. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the pan, and let the rice cook until it is tender and has absorbed the water. The rice should be fluffy and separate, not mushy, indicating it is done.
  5. Preheat your oven to 180°C (350°F). Stuff each bell pepper with the cooked rice mixture, pressing down gently to pack it in. Arrange the stuffed peppers upright in a baking dish. Drizzle a little olive oil over the top of each pepper to keep them moist during baking.
  6. Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the peppers are tender and slightly charred on the edges. The peppers should be soft enough to pierce easily with a fork, indicating they are done.
  7. Remove the stuffed peppers from the oven and let them cool slightly. Taste the filling for salt, adjusting if necessary. Serve warm, allowing everyone to enjoy the rich, aromatic flavors of this traditional Pakistani dish.
