The dish delivers a harmonious blend of textures and flavors, where the creaminess of eggplant meets the fresh bite of zucchini and the tangy sweetness of tomatoes. Ingredients

  • 1eggplant
  • 2zucchini
  • 2tomatoes
  • 80 mlolive oil
  • herbs — chopped

Method

  1. Begin by washing and drying 1 eggplant, 2 zucchini, and 2 tomatoes. Slice the eggplant and zucchini into 1/4-inch rounds, and the tomatoes into slightly thicker slices to maintain their shape during cooking. Drizzle the vegetables with 80 ml olive oil, ensuring they are well-coated, and season generously with fine sea salt and black pepper. Toss them gently to distribute the seasoning evenly.
  2. In a large, heavy-bottomed skillet or pan, heat a tablespoon of the remaining olive oil over medium heat. Add a finely chopped onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma. This will form the flavorful base of your bake.
  3. Arrange the seasoned eggplant, zucchini, and tomato slices in the pan over the softened onions. Layer them in a pattern, slightly overlapping each slice, to ensure even cooking and a beautiful presentation. Drizzle any remaining olive oil over the top.
  4. Cover the pan with a lid and reduce the heat to low. Allow the vegetables to cook gently, steaming in their own juices, until they become tender but still hold their shape. The eggplant should be soft and creamy, while the zucchini and tomatoes should be tender but not mushy.
  5. Once the vegetables have reached the desired texture, uncover the pan and increase the heat slightly to evaporate any excess moisture. This will concentrate the flavors and give the vegetables a slight caramelization.
  6. Taste the dish and adjust the seasoning with more fine sea salt and black pepper if needed. Sprinkle fresh herbs of your choice, such as cilantro or parsley, over the top for a burst of freshness.
