Ingredients

  • 800 gbeef cubes

Method

  1. Begin by seasoning 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. Ensure each piece is evenly coated by tossing them in a large bowl. This step infuses the meat with flavor from the start, which is essential for a well-seasoned dish.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 5-7 minutes per batch. This browning process enhances the flavor of the dish.
  3. While the beef is browning, peel and slice 2 carrots into rounds and finely chop 1 onion. Once all the beef is browned, remove it from the pot and set aside. Add the chopped onion to the pot, using the same oil and beef drippings to sauté until the onion becomes translucent and slightly golden, which should take about 5 minutes.
  4. Add the sliced carrots to the pot with the onions and continue to sauté for an additional 3 minutes. This step allows the carrots to begin softening and absorb the flavors from the pot.
  5. Return the browned beef cubes to the pot, ensuring they are well mixed with the onions and carrots. Pour in 500 ml of water, scraping the bottom of the pot to release any browned bits, which will enhance the flavor of the broth.
  6. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and allow the beef to braise slowly for about 1.5 to 2 hours, or until the meat is tender. You'll know it's done when the beef is easily pierced with a fork and the broth has a rich, aromatic scent.
  7. Once the beef is tender, taste the dish and adjust the seasoning with more salt and black pepper if necessary. Serve the Persian Beef Pot 2 hot, accompanied by rice, bread, or a fresh salad, making sure to ladle some of the flavorful broth over the beef.
