Persian Beef Pot

Persian Beef Pot is a comforting dish that finds its place on Persian home tables, where it's cooked with a generous hand for seasoning and sharing. The dish is known for its rich and savory taste, achieved by using simple ingredients like beef, carrots, and onions, enhanced with fine sea salt and black pepper. It's a straightforward yet satisfying meal that brings warmth and togetherness to any gathering.

Ingredients

  • 800 gbeef cubes

Method

  1. Begin by seasoning the 800 g of beef cubes generously with fine sea salt and freshly ground black pepper. This step is crucial as it enhances the natural flavors of the beef, allowing the seasoning to penetrate the meat.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Brown the beef on all sides until it develops a deep, rich color, which should take about 5-7 minutes per batch. This browning process is essential for building flavor.
  3. While the beef is browning, peel and slice 2 carrots into thick rounds and finely chop 1 onion. Once the beef is browned, remove it from the pot and set it aside. Add the chopped onion to the pot, using the remaining oil and beef drippings to sauté until the onion becomes translucent and slightly golden, releasing a sweet aroma.
  4. Add the sliced carrots to the pot with the onions, stirring occasionally until the carrots begin to soften slightly, about 3-4 minutes. This step allows the carrots to absorb the flavors from the pot, adding a subtle sweetness to the dish.
  5. Return the browned beef cubes to the pot, along with any accumulated juices. Pour in 500 ml of water, ensuring the beef is mostly submerged. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and allow it to braise. The beef should become tender and flavorful, absorbing the aromatic broth, which typically takes about 1.5 to 2 hours.
  6. Check the beef for tenderness by piercing a piece with a fork; it should yield easily and be succulent. Taste the broth and adjust the seasoning with more salt and pepper if necessary, ensuring the flavors are balanced and to your liking.
  7. Serve the Persian Beef Pot hot, accompanied by rice, bread, or a fresh salad. The dish should be aromatic and inviting, perfect for sharing around the table, embodying the essence of Persian home cooking.
