Persian Beef Skewers 2

Persian Beef Skewers 2 reflects the casual yet deeply rooted traditions of Persian home cooking. This dish is commonly prepared for family meals, where the essence of hospitality is shared around the table. With salt measured by the cook's hand and fat embraced as a flavor ally, it captures the essence of everyday Persian dining, brought together in a familiar and comforting manner.

The skewers offer a robust taste, where the beef's richness is accentuated by the aromatic cumin and a gentle kiss of black pepper. The onions lend a subtle sweetness, balancing the savory notes. Each bite should be tender, with the meat melting in your mouth, inviting you to savor the simplicity and warmth of a Persian home-cooked meal.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Grate 1 onion over the beef, allowing the juices to mix with the meat. Add 1 tsp cumin, and season generously with fine sea salt and black pepper to taste. Mix thoroughly with your hands, ensuring each piece of beef is evenly coated with the spices and onion.
  2. Thread the seasoned beef cubes onto skewers, leaving a small gap between each piece to allow even cooking. If using wooden skewers, soak them in water for about 30 minutes beforehand to prevent burning.
  3. Heat 2 tbsp oil in a large skillet or grill pan over medium-high heat. Once the oil is shimmering, carefully place the skewers in the pan, ensuring they are not overcrowded. Cook the beef until each side is deeply browned, turning occasionally to achieve an even sear.
  4. Once browned, reduce the heat to medium and continue cooking the skewers, turning them occasionally. The beef should be tender and cooked through, with a slight char on the edges. You can check for doneness by cutting into a piece; it should be juicy and cooked to your preferred level of doneness.
  5. Remove the skewers from the pan and let them rest for a few minutes. Taste a piece of beef and adjust the seasoning with more salt or pepper if necessary. Serve the skewers immediately, accompanied by rice, bread, or a fresh salad for a complete meal.
