Persian Beef Skewers 3

Persian Beef Skewers 3 is a celebration of home cooking, where the familiar dance of salt and fat meets the communal joy of sharing a meal. This version captures the essence of family gatherings at Persian tables, where the skewers are as much about the conversations they inspire as the nourishment they provide. Forget the rigid measures and embrace the intuitive touch of a Persian home cook.

Tender beef cubes, marinated with a whisper of cumin and the warmth of black pepper, offer a symphony of flavors that are both robust and comforting. The onion lends a subtle sweetness, while the generous use of oil ensures each piece is succulent. This dish invites you to savor the art of simplicity, where each bite is an homage to the rich tapestry of Persian culinary wisdom.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Start by placing the 800 g beef cubes in a large mixing bowl. Finely chop 1 onion and add it to the bowl with the beef. Sprinkle 1 tsp of cumin, fine sea salt, and black pepper to taste over the beef and onions. Use your hands to mix everything thoroughly, ensuring each piece of beef is well-coated with the spices and onion.
  2. Thread the seasoned beef cubes onto skewers, leaving a small gap between each piece to allow even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  3. Heat 2 tbsp of oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully place the skewers in the skillet, ensuring not to overcrowd the pan. Cook the beef skewers, turning occasionally, until each piece is deeply browned on all sides, which should take about 3-4 minutes per side.
  4. Once the beef is browned, you can choose to braise or grill the skewers. For braising, transfer the skewers to a baking dish, cover with foil, and place in a preheated oven at 180°C (350°F) for about 20-25 minutes, until the beef is tender. For grilling, preheat your grill to medium-high and cook the skewers for an additional 5-7 minutes, turning occasionally, until the beef is tender and cooked through.
  5. Remove the skewers from the heat and let them rest for a few minutes. Taste a piece of beef and adjust the seasoning with more salt if needed. Serve the Persian Beef Skewers 3 with rice, bread, or salad, allowing everyone to share and enjoy the meal together.
