Method

  1. Begin by patting the whole chicken dry with paper towels to remove any excess moisture, which helps achieve a crispier skin. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring even coverage over the entire surface. In a large, heavy-bottomed skillet or Dutch oven, heat 2 tablespoons of oil over medium-high heat until shimmering. Place the chicken in the skillet, breast side down, and brown it for about 5-7 minutes on each side until the skin turns a deep golden brown and releases easily from the pan.
  2. While the chicken is browning, peel and cut the 1 kg of potatoes into large, even-sized chunks. Once the chicken is browned, remove it from the skillet and set it aside on a plate. Add the potato chunks to the same skillet, allowing them to absorb the flavorful drippings left behind by the chicken. Cook the potatoes, stirring occasionally, until they begin to turn golden and slightly tender, about 5-8 minutes.
  3. Return the browned chicken to the skillet, nestling it among the potatoes. Squeeze the juice of a halved lemon over the chicken and potatoes, ensuring the juice is evenly distributed. Cover the skillet with a tight-fitting lid or aluminum foil to trap the steam, which will help cook the chicken through and infuse the potatoes with flavor. Reduce the heat to medium-low and allow the chicken to roast gently, basting occasionally with the pan juices, until the chicken is cooked through and the potatoes are tender.
  4. Check the doneness of the chicken by inserting a knife into the thickest part of the thigh; the juices should run clear, and the meat should feel firm to the touch.
