Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your ingredients. Finely chop 1 onion and set aside. Dice 2 tomatoes into small pieces, ensuring they are roughly the same size for even cooking. Drain and rinse 400 g of chickpeas under cold water to remove any excess starch and set them aside. Measure out 1 tsp of cumin and have fine sea salt and black pepper ready for seasoning.
  2. In a large, heavy-bottomed pot, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the chopped onion. Stir occasionally, cooking until the onion turns translucent and soft, about 5 to 7 minutes. This slow cooking releases the onion's sweetness, forming the base of your curry.
  3. Add the diced tomatoes to the pot with the softened onions. Stir well to combine, allowing the tomatoes to break down and release their juices. This should take about 5 minutes, and you'll notice the mixture becoming saucy and aromatic.
  4. Sprinkle 1 tsp of cumin over the tomato-onion mixture, stirring to coat the vegetables evenly with the spice. This step blooms the cumin, enhancing its flavor. Add the rinsed chickpeas to the pot, stirring to combine everything thoroughly.
  5. Reduce the heat to low and let the curry simmer gently. Stir occasionally, allowing the chickpeas to absorb the flavors and the sauce to thicken. You'll know it's ready when the chickpeas are tender and the sauce has a rich, cohesive texture.
  6. Taste the curry and add fine sea salt and black pepper to your preference, stirring well after each addition. The seasoning should enhance the natural flavors without overpowering them. Serve the Persian Chickpea Curry hot, ideally with warm bread or rice, inviting everyone to share in the meal.
